🍣 While in its early days, sushi was a simple means of preserving fish, wrapped in fermented rice, sushi has become a star of Japanese cuisine. The modern sushi appeared in the Edo era (1603-1868). It was pressed by hand in small mobile stalls called yatai. In 1923 following the Tokyo earthquake, the cooks who fled the city spread the specialty throughout the archipelago. Today, the best sushi restaurant in the world can be found in the Tokyo subway. At past 90, master Sukiyabashi Jiro believes he has not yet reached perfection! He operates with his son and disciple who started at his side 45 years ago. In Japan, some people still believe that the art of sushi is only for men (women's hands would be too hot 🤔) but more and more of them are training to become sushi masters too. To eat your sushi, favor your fingers over chopsticks, dip the fish and not the rice in the soy sauce and try to eat it in one bite! .
